The book gathers the Danish author’s preparations, celebrations and traditions for Easter. She shares some of her heirloom Easter recipes, how to make handmade decorations, favourite natural wreaths, and some of the traditions she was brought up with in Denmark and some new ones she have created living here in Australia.
Moroccan Salad with chickpeas – perfect for lamb or steak!
For Easter we will serve it with lamb but it’s also great as a vegetarian dish. We love to eat any leftovers for lunch the next day!
Place the chickpeas in a bowl and add the onions, garlic, cranberries or apricots, preserved lemon, spices, olive oil, lemon juice and soy sauce. Toss to combine and leave to marinate for at least an hour.
Line a serving bowl or dish with baby spinach leaves, add the chickpea salad and sprinkle with the parsley. Top with the yoghurt and pistachios and drizzle with the pomegranate molasses.

She divides her time between working and living in the city and spending most weekends and holidays in the countryside at Turon Gates. She thrives in nature as it is where she refuels and gets inspired, but at the same time, she adores the buzz of the city and the amazing window decorations created by international brands in the city stores. She likes her life of contrasts: being in the garden in gumboots and dressing up with feathers for a party.
Being Danish, EASTER comes with a lot of beautiful traditions. It’s very important for her to pass these traditions on from her grandparents and parents to the next generation.
